Roasted Salmon with Curried Peach Sauce



This recipe is so simple and tasty, and peaches are in season right now so go get some delicious peaches from the farmers' market!

I roasted the salmon instead of grilling it, because I don't have a grill, and because the last time I tried to "grill" salmon on my grill pan, everything fell apart. I served the salmon on top of quinoa, but couscous or something similar would work well too.

Roasted Salmon with Curried Peach Sauce

Ingredients

2 salmon fillets
1/4 cup honey
1 teaspoon curry powder
2 fresh peaches, peeled and diced
Kosher salt and pepper
Olive oil

1. Preheat the oven to 375 degrees.

2. Coat the bottom of an oven safe roasting/baking dish with olive oil. Season both sides of the salmon fillets with Kosher salt and pepper then place in the pan. Brush more olive oil onto the tops and sides of the fillets. Roast for 20 minutes.

3. While the salmon is roasting, stir together the peaches, honey and curry powder in a small saucepan over medium heat. Bring the mixture to a simmer, stirring frequently, until the sauce thickens (about 10 minutes).

4. Top the salmon fillets with the peach sauce.
